Applesauce is cheap when purchased in a large jar. I love to use it to make a healthy breakfast for those weeks that seem busier than usual. I’ll make the applesauce muffins on Sunday, and then individual wrap them so that they can be grabbed on-the-go during the week. My kids love anything that even resembles a muffin, so I feel good about feeding them one that is void of chocolate chips and oil.
You will need the following items to make the applesauce muffins:
- 1 ½ cups whole wheat flour
- ½ cups unsweetened applesauce
- 1 tsp. baking powder
- ½ tsp. baking soda
- 1 egg
- 2 tsp. cinnamon
- ¾ cup brown sugar
- ¼ tsp salt
- 5 1/2 tbsp. butter
- ½ cup raisins
Follow these steps to make your applesauce muffins:
Mix the whole wheat flour, baking powder, baking soda, cinnamon, brown sugar, and salt in a large mixing bowl.
Combine the butter, egg, and unsweetened applesauce together in a bowl.
Transfer the applesauce mixture to the dry ingredients in the mixing bowl. Stir until completely combined.
Toss in the raisins and lightly mix in.
Preheat the oven to 375 degrees F. While the oven is heating up, place the muffin mix in baking cups inside a cupcake pan. Fill each cup 2/3 of the way up.
Bake for 18 minutes total, or until the muffins are golden brown on top (or you can insert a fork so that it comes out clean).
Note: This recipe will yield a dozen muffins.
